This recipe requires only minimal prep work. About 30 minutes before you want to cook these, prepare two bowls (a.k.a. your "breading station"). Whisk the three eggs in one bowl. In the other, mix your pork panko and Dirty Bird seasoning for the breading.
Get your mozzarella cheese sticks, and slice them in half (or to your preferred size/shape). Give them an egg wash in the first bowl, then dip in the panko/seasoning mixture. Repeat three times for the best coating.
Finally, place the prepped cheese sticks in the freezer for 25-30 minutes to tighten them up before cooking.
When you're ready to cook, fire up your cooker and preheat to 450ºF (232ºC). You can, in theory, grill these directly on your grill grates, that's why it's important to freeze them beforehand: while the outside crisps up, the inside is still solid, preventing the cheese stick from falling through the gaps.
An alternative is using a cast iron skillet, with just enough olive oil in it. This will make it safer for your cheese sticks, as well as help with transporting them to- and from the cooker.
Cook the breaded cheese sticks for 10 minutes, until the outside is all crispy and the inside is pure molten, gooey goodness.
And that's all there is to it! Serve the keto cheese sticks while they're still hot, alongside your favorite dipping sauce. We suggest a tomato-based salsa - let us know what you would do!
