Mexican Spiced Ribeye

Tantalize your taste buds with this flavorful Mexican Spiced Ribeye Steak recipe. This sizzling delight, seasoned with zesty lime butter, is sure to elevate your grilling game!

You Will Need

  • 2 ribeye steaks
  • 4 tablespoons of Kerrygold butter
  • 2 garlic cloves, minced
  • Zest of 1 lime
  • 1 tablespoon of fresh lime juice
  • Kosmo's Q SPG seasoning
  • Kosmo's Q Lab Fajita rub
  • Olive oil

The Prep

To kick off this delicious recipe, preheat your cooker to high heat - around 550°F (287°C). While it's coming up to temp, take a moment to inspect your ribeye steaks. If there are any excess fat or undesirable bits, trim them away. 

Next, mince the garlic cloves, grate the zest of one lime, and squeeze out its juice. Then grab a small bowl, and in it combine the Kerrygold butter, minced garlic, lime zest, lime juice, and a sprinkling of SPG seasoning (to taste). Mix until well blended for a flavor-packed lime butter.

The Cook

Now it's time to cook these ribeye steaks to mouthwatering perfection! Before we get to grilling, place the ribeye steaks on a cutting board and generously season all sides with the SPG and Kosmo's Q Lab Fajita rub. Allow the seasoned steaks to rest for about 10 minutes, so the flavors have the time to penetrate the meat.

Once the steaks and cooker are ready to go, carefully place the steaks onto the hot surface. Let them cook for precisely 1 minute and 20 seconds on one side, ensuring a beautiful sear. Flip the steaks over and cook for an additional 1 minute and 20 seconds. To achieve those coveted grill marks, rotate the steaks 90° and cook for another 1 minute and 20 seconds on each side.

As the internal temperature of the steaks approaches 125°F (52°C), remove them from the cooker. This temperature will give you a perfectly cooked medium-rare steak, but feel free to adjust the cooking time based on your desired level of doneness, allowing it to melt and infuse the meat with its tantalizing flavors.

The Payoff

One last step to go! Top each steak with a generous dollop of the lime butter mixture, and allow them to rest for 10 to 20 minutes. This will give the juices time to redistribute throughout the meat, resulting in a juicier steak that will melt in your mouth.

When it's time to serve, slice the ribeye steaks against the grain. The tangy lime butter will add a burst of freshness to each bite, complementing the rich flavors of the perfectly cooked beef. Consider squeezing some fresh lime juice over the sliced steak for an extra pop of citrus. And above all, enjoy!
