Start by cleaning up any silver skin or unevenness on the pork loin using a sharp boning knife. This step ensures that your loin cooks evenly and results in a tender, succulent bite.
Once prepped, it's time to add some flavor: Generously season the pork loin with Sweet Honey Pecan rub, and let it sweat while you set up the smoker. Set the temperature to 300°F (149°C), using Smokey Woods pecan wood for smoke.
Now it's time to introduce the pork loin to the smoker and let the magic happen. Allow the pork loin to smoke for about 1.5 hours. Keep a close eye on the internal temperature: as it reaches 120°F (49°C), it's time to baste it with some Honey Jalapeno BBQ sauce, and cover in crushed pecans. The sauce will act as a sticky glue for the crushed pecans, creating a delightful texture.
