  • Do I need more than one rub for chicken?

    That’s up to you, but we always layer our rubs, even on chicken. The Best Beer Can Chicken Rub and Southern Chicken Clean Eating Rub make great base layers for another rub like Dirty Bird HOT

  • How long should I cook chicken?

    Like other kinds of meat, you’re not looking for a certain time; you’re going for the final internal temperature. According to current food safety guidelines, for all cuts of chicken, that temperature is at least 165°F or 74°C. We like to go a little higher, but you do you, just make sure it's 165°F at least.

  • Should I wash my chicken before I start the prep?

    According to USDA Food Safety guidelines, no. Their research shows it actually increases the risk of cross-contamination.

  • Is a ceramic chicken stand really necessary? Can’t I just sit the bird on my beer?

    You do you, but it makes the process a lot easier, and there’s no risk of coming away with a bird that tastes like a can.

  • How do I use Wing Dust? Is it like a rub?

    Wing Dust is a class of its own! For maximum flavor, we recommend cooking your wings first with a rub (like SPG or Dirty Bird) then tossing them in the Wing Dust. Because of it’s fine consistency, that’s the best way to get the most flavor in every bite.

  • Is Wing Dust only for wings or can I use it on other things?

    Any flavor of Wing Dust is fan-freaking-tastic on a variety of things from popcorn and chips to pizza, you really can’t go wrong with a sprinkle of Wing Dust on just about anything.

  • How do I get crispy skin on my chicken?

    After you inject or soak your chicken, before you apply any rub, make sure you pat it dry with paper towels. And don’t be shy with the rub, or rubs, you use!
