Testing The Matty Matheson Minute Steak!

If there was ever an easy steak recipe... This would be it! You can cook this steak on just a cast iron skillet and be ready to serve within minutes (hence the name). Obviously inspired by our muse, Mathy Matheson, and his minute steak recipe.

You Will Need

  • 1 Eye Of Round Steak
  • Kosmo's Q SPG Rub
  • Canola Oil
  • Salted Butter (the fancy stuff)
  • 1 large Yellow Onion
  • Mushrooms

The Prep

The premise of Mathy's recipe is a quick and easy steak recipe that you can do with simple ingredients and that will still end up being delicious. As such, the only prep needed for the steak is to season it. The original recipe calls for good ol'salt and pepper, but we went with SPG for a little extra flavor. Use whatever you enjoy!

Next, let the meat sweat through the rub. It is crucial that you allow it to come up to as close to room temperature as possible. This is what will make it cook fast and evenly.

The Cook

Time to get some heat going. Grab a cast iron skillet, and add enough oil to where this is essentially a shallow fry. Let it come up to a very high temperature, at least 600-800ºF (315-425ºC).

Once the oil is hot, place your steak in the oil and sear both sides. Depending on the temperature of both your pan and the meat, as well as the thickness of the steak, this step may take as short as one minute. You may find that it can longer than that.

Flip your steak after the crust is a nice golden brown. Allow the other side to sear as well. 

Once the steak hits 115ºF (46ºC), drop in two tablespoons of butter and baste the steak well. Then let it come up to 127ºF (52ºC) internal temperature.  

The Payoff

Finally, lay the steak on the cutting board and let it rest for a few minutes. In the meantime, throw the sliced onions and mushrooms in the same skillet and let them caramelize.

Once those are ready too, serve your minute steak with onions and mushrooms and dig in while it's hot!
