Poor Man's Chicken Pot Pie Recipe

Looking for a comforting, hearty meal that won't break the bank? This simple yet satisfying Poor Man's Chicken Pot Pie is what you're looking for. The perfect dish to warm you up on chilly evenings, with ingredients you probably already have at home!

You Will Need:

  • 2 cups diced, cooked chicken (You can use rotisserie chicken for convenience)
  • 1 cup cooked, chopped bacon
  • 2 cans Campbell’s Chunky Chicken Pot Pie Soup
  • 2 cans Grands Flaky Biscuits
  • Dirty Bird, to taste
  • Kosmo's Q SPG rub, to taste
  • 1 egg

The Prep

First things first: preheat your oven to 350°F (180°C). In the meantime, take the time to prep some of the ingredients. Open the biscuits and cut them into quarter, and cook the bacon until it's nice and crispy. Once done, set it aside to cool, and chop it into bite-sized pieces.

In a large mixing bowl, combine the diced chicken, chopped bacon, and Campbell's pot pie soup. Mix everything together until well-combined, into a flavor packed mix. 

The Cook

With your prep work complete, it's time to bring everything together. Pour the chicken, bacon, and soup mixture into a 9x13" oven-safe baking dish, spreading it out evenly to ensure every bite is equally satisfying. In a small bowl, beat the egg with a tablespoon of water to create an egg wash.

Now, arrange the cut biscuits on top of the mixture in the baking dish, creating a layer that will bake up golden brown and delicious. Once arranged, brush the biscuits with the prepared egg wash, which will result in a beautiful sheen and extra flavor in the finished dish.

Finally, slide the baking dish into the preheated oven and let it bake for about 30 minutes, or until the biscuits are golden brown and the filling is bubbling.

The Payoff

As the scent of your Poor Man's Chicken Pot Pie fills the kitchen, you'll know that its just about ready! Once done, remove the pot pie from the oven and allow it to cool for a few minutes before serving.
