Entered my 1st BBQ Competition this past weekend and had a blast. Was surprised that I won 1st Place Brisket, 1st Place Chicken & GRAND CHAMPION! I used Double Pepper Rub along with Meat Church Holy Cow and some other spices i put together and cooked 2 Hassell Cattle Co Wagyu Briskets and they turned out awesome. It was a torrential downpour and didn’t get any photos of the finished product but turned in Slices & Burnt Ends. Love the Double Pepper run.

I've been smoking for over 30 years, and have used so many commercial rubs and seasonings, and have made my own, but I decided to try this Double pepper coarse Cow Rub on a brisket I just did for Christmas 2024. I have a bunch of Kosmos rubs and seasonings and I really like them, especially Dirty Bird. So I started with a USDA Prime brisket, trimmed it up, and injected it with A5 Wagu tallow, then smeared the excess all over and gave a first coat of Kosmos Texas Beef all around, then came back with a heavy coat of Double Pepper Coarse Cow Cover and fired up the RecTec Bull to 235. I made a mix of charcoal pellets and mesquite pellets, and a Competition blend for fuel. After 5 hrs it looked good, bark was set nicely, so I made a foil boat and let it ride till 207. I let it steam off a few min, then wrapped in butcher paper, and covered with towels for a 9 hour rest. MAN O MAN, the bark was Fantastic, thick, sticky, and FULL of Flavor! I sliced it up, and hardly finished slicing when everyone started plating up. I Got All WOWs and OMGs! Most everyone got seconds, and not a crumb left of the brisket. I'm gonna say, that this Double Pepper, and Texas Beef made the BEST Bark I've ever achieved on a brisket and it tasted Fantastic.

Love the double pepper coarse cow cover rub a little more than just the regular cow cover with SPG. The extra pepper give a little more kick and it seems to be a slightly bolder flavor everyone loved. I usually add SPG with the regular cow cover and didn't this time so I'll need to try that with the double pepper coarse and see if it's overkill or awesome. Time to grill again!
Also tried the best prime steak rub alone and the flavor is awesome but my steaks ended up dry for some reason which has never happened. More grilling to get that one figured out.

I have been a customer almost from the very beginning.
The Double Pepper rub is awesome. I used it on stuffed burgers (without bun (stuffed with chopped jalapeno,
onion and sharp cheder cheese. It is also fantastic on steaks. Another '"can't do without" are Sweet Honey Pecan and Honey Killer Bee. I alternate them when making mini breakfast sandwiches with ground sausage, sliced olives and chopped jalapeno's. Good stuff.
