This bowl with Asian beef tips and fried rice is a quick (& dirt cheap) weeknight meal idea that's bound to become a favorite! You might already have some of these in your house, so make sure to get everything else, so next time you get hungry you can whip up this flavor packed dish.
Let's get some individual ingredients out of the way first. Get your pan, water, and rice ready, and cook the rice according to the instructions on the package. If you know that you want to make this in advance, cook the rice the day before - Day old rice that's starting to dry out a little works best for this - but there's no issue if you cook the rice right before.
Next, start heating the flattop over medium-high heat, and heat your cast iron skillet over high heat. While those are coming up to temp, you can go ahead and prep the veggies as well as marinate the beef.
Cut the broccoli into bite size pieces, and thinly slice onion. Also thinly slice enough green onion for finishing garnish, and set it aside. Then grab a mixing bowl. In it, add the beef tips, drizzle with olive oil, and coat with Dirty Bird Sriracha. Mix the beef tips until well coated, then give them at least 10 minutes to rest at room temperature. In another bowl, add eggs and SPG, then beat until smooth.
Let's get cooking! Once the flattop is ready and the meat has rested, heat a drizzle of oil on the surface. Saute the sliced onions first, then add beef tips. Saute those until they reach your desired doneness, then remove from the cooking surface, and rest in a clean mixing bowl. Add more SPG to taste.
Next, you want to add the broccoli, peas, and carrots to the flattop. Season with Dirty Bird Sriracha and soy sauce, then sautee those to your desired doneness as well.
Now pour in the beaten eggs, and scramble until the eggs are almost there (about ¾ cooked). Add two to three tablespoons of oil, as well as the cooked rice and frozen vegetables. Mix well with the eggs. Finally, drizzle with soy sauce to your taste, season with SPG and Dirty Bird Sriracha, and cook until everything is mixed together.
While the rice cooks, grab your Sticky Asian Rib Glaze, and pour it all over the beef tips in the bowl. Toss to coat well. Then, once the rice is ready, transfer portions to a plate (or small bowl), and top with beef tips. Drizzle with some extra Sticky Asian BBQ Glaze, and garnish with green onion to taste.
