Bacon & Eggs Breakfast Tacos

What better way to start your day off on an exciting, delicious note, than breakfast tacos? Using ingredients you probably already have at home to cook up this easy, quick, and filling breakfast that will give you all the energy you need for the day.

A super fun recipe by Aaron Casey (@smokeytirebbq), who came up with this (as most great chefs do) while hungry. Definitely not another "plain Jane" breakfast, thank you Aaron!

You Will Need

The Prep

If you often find yourself wanting something more out of your breakfast, then this one's for you. It's super quick too - the only real prepwork needed is to have all of the ingredients at home. Nobody wants to get out of bed, go get tortillas from the store, and then come back and have breakfast!

So, assuming your pantry is well stocked, here's how to make some killer bacon & eggs breakfast tacos. 

The Cook 

Let's get cooking! Heat a 10 inch frying pan on medium-high heat. Throw on the bacon, and fry to your desired crispiness. then pull it out of the pan, but reserve bacon grease.

Next, in the same frying pan, add 3 Tbsp of bacon grease and 1 Tbsp butter. Fry your diced onions in the bacon grease & butter until slightly translucent (about 5 - 7 minutes). Then add the diced potatoes, and season with 1 tsp of Cow Cover Hot, 1 tsp Dirty Bird, 1 tsp Honey Killer Bee, and 1 tsp SPG rub. Optionally, add red pepper flakes (to taste) for that extra heat!

After you're done, set aside the frying pan and grab a bowl. Crack and beat the eggs, and add the milk while whisking. This will give the eggs some volume, and make them all fluffy and delicious!

Heat a 6 inch frying pan on medium heat, and melt 1 tbsp butter alongside 1 tbsp olive oil. When hot, add the beaten eggs/milk combo. Season with 1 tsp SPG, and top with shredded cheese.

The Payoff

Everything is in place for some spectacular breakfast tacos! Only thing that's left to do is warm up the tortillas, and assemble. Add ingredients to the tortilla in the following order: Tortilla - Potatoes - Eggs - Salsa - Hot Sauce (optional) - Bacon - Cilantro as garnish.
