Authentic Tacos Al Pastor Recipe

You Will Need:

Marinade ingredients:

  • 6 dried guajillo chilies, stems, and seeds removed
  • 3 dried ancho chilies, stems, and seeds removed
  • 3 chili diablos
  • ¼ to ½ white onion
  • 4 cloves garlic
  • 1/4 cup white vinegar
  • 1/4 cup orange juice
  • 1/4 cup pineapple juice
  • 1/4 cup pineapple (finally chopped)
  • 1 tablespoon achiote paste (optional)
  • Q Lab Fajita rub, to taste
  • Kosmos Q SPG rub, to taste

Tacos ingredients:

  • 2 pounds pork shoulder, thinly sliced
  • White corn tortillas
  • Pineapple, thinly sliced
  • Onion, finely chopped
  • Cilantro, chopped
  • Lime wedges
  • Salsa (optional)

The Prep

The first step to creating authentic Tacos al Pastor is marinating the pork. Begin by toasting the dried chilies in a dry skillet until fragrant, then soak them in hot water until softened. Once softened, blend the chilies with onion, garlic, white vinegar, orange juice, pineapple juice, and spices until you reach a smooth consistency. Thinly slice the pork shoulder and marinate it for at least 4 hours (or overnight) to allow the flavors to meld.

The Cook

Once the pork has absorbed all the flavors from the marinade, it's time to get cooking! Preheat your grill or oven to medium-high heat. If grilling, thread the marinated pork slices onto skewers or use a rotisserie, cooking for about 10-15 minutes until cooked through and slightly charred around the edges. Alternatively, you can broil the pork slices in the oven for the same amount of time, ensuring they're evenly cooked and slightly charred.

While the pork cooks, warm the corn tortillas on a skillet or grill for a few seconds on each side, preparing them to hold all of the ingredients for an authentic Taco Al Pastor.

The Payoff

By now, the aroma of freshly cooked pork should be making your mouth water - it's time to assemble your Authentic Tacos Al Pastor! Fill each warm tortilla with the juicy pork slices, topping them with slices of pineapple, finely chopped onion, and fresh cilantro. Squeeze a generous amount of lime juice over the top to enhance the flavors, and add salsa for an extra kick if desired.
