Bacon Wrapped, Stuffed Pork Tenderloin Recipe

The sweet and hot combo in this pork tenderloin will create a mouthwatering flavor in these juicy, tender piece of meat.

You Will Need

The Prep

Preheat the grill for 2 zone cooking. This means one side of the cooking area is directly above the heat source, while the other benefits from convection.

While the cooker is heating up, let's prep the tenderloin. Get it out of any packaging, and pat it down with paper towels to remove excess moisture. 

Using a sharp knife, trim unwanted fat and silverskin off the tenderloin. Then gently and carefully slice the tenderloin in half across its length 3/4 the way through (but not all the way). Lay open and flat.

The Cook

Season the pork with a light coating of SPG, followed by a layer of Dirty Bird on all sides of meat.

Next, mix cream cheese with chopped green onions. Fill jalapeños with cream cheese mixture. Lay filled jalapeño halves in center of pork tenderloin. Fold pork tenderloin closed.

Now wrap the stuffed tenderloin with strips of bacon. Let the slices overlap to keep everything inside. Use lengths of butcher's twine every inch and a half to secure the bacon wrapped tenderloin.

Place tenderloin over indirect heat, and let internal temperature come up to 125ºF (52ºC). Then move it over to direct heat. Flip every couple of minutes to sear without charring or burning it. Just crisp up the edges.

When the bacon wrapped tenderloin hits an internal temperature of 140ºF (60ºC), move it back to indirect heat. Baste with Raspberry Chipotle BBQ sauce (or any other sauce you like), and let it set for 10 minutes.

The Payoff

Finally, bring the tenderloin inside. Let it rest for 10 minutes at room temperature, lightly tented with aluminum foil. This will give the juices time to redistribute themselves inside the meat.

Remove all string, then slice and serve. Optionally baste with some extra BBQ sauce.
