You Will Need

The Prep

Before you fire up the grill, get all your ingredients ready to go.

Dice the yellow onion, red bell pepper, green bell pepper, and jalapeños. Remove the seeds from the jalapeños if you want to keep the heat under control.

Once everything is chopped and measured, you're ready to start building some serious flavor.

The Grill Setup

Preheat your grill or smoker to 350°F.

You'll be cooking the chorizo and vegetables directly in a cast iron skillet or aluminum pan before moving everything over to indirect heat.

Once your grill is up to temperature, it's time to get started.

The Flavor Base

Place your cast iron skillet or aluminum pan over the heat and add the chorizo.

Cook the chorizo until browned and fully cooked, breaking it apart as it cooks.

Once the chorizo is ready, add the diced yellow onion, red bell pepper, green bell pepper, and jalapeños directly to the pan.

Season everything with the Kosmos Q Dirty Bird Rub and stir it all together.

Let the vegetables cook for about 5 minutes, or until they begin to soften and soak up all that flavor from the chorizo and seasoning.

This is where the foundation of these baked beans really starts to come together.

The Beans

Now it's time to bring everything together.

Add both cans of baked beans to the pan along with the Kosmos Q Original Competition BBQ Sauce, brown sugar, yellow mustard, and Worcestershire sauce.

Stir everything together until the beans, chorizo, vegetables, and sauce are fully combined.

You should have a thick, rich mixture loaded with sweet, smoky, savory, and slightly spicy flavors.

The Cook

Move the pan to the indirect side of the grill or place it in your smoker.

Cook the baked beans uncovered for 60 to 75 minutes, stirring every 20 minutes to make sure everything cooks evenly and nothing sticks around the edges.

As the beans cook, the sauce will begin to thicken, the flavors will come together, and you'll start to see the mixture bubbling around the edges.

Don't rush this part. That time on the grill or smoker is what brings everything together.

The Finish

Once the beans are thick, bubbling, and loaded with flavor, carefully remove the pan from the grill.

Let them rest for about 10 minutes before serving.

The sauce will continue to thicken slightly as the beans cool, giving you that rich, hearty consistency you want in a good pan of baked beans.
