Not to brag, but these Cajun Corn Ribs might just be the most fun way you've ever eaten corn. They're smoky, buttery, packed with bold Cajun-inspired flavor, and they curl up beautifully on the grill. With just a few simple ingredients and about 20 minutes of cook time, these corn ribs make an easy side dish or appetizer that's guaranteed to disappear fast. Let's get to it.

You Will Need

The Prep

The only tricky part of this recipe is cutting the corn, so take your time here.

Stand each ear of corn upright on a sturdy cutting board with the flat end facing down. Using a sharp chef's knife, carefully cut straight through the cob to split it in half lengthwise. Then cut each half in half again to create 4 long corn ribs per ear.

A sharp knife makes a big difference here, so don't try to fight your way through the cob with a dull blade.

Once all the corn is cut, lightly coat each corn rib with spray butter. Season all sides generously with Kosmos Q SPG Rub and let them sit for about 5 minutes while you get the grill fired up.

The Grill Setup

Set your grill up for two-zone cooking. You want one side running hot for direct heat and the other side cooler for indirect cooking.

For a charcoal grill, pile all the coals to one side. If you're cooking on a gas grill, set one burner to high and leave the other side on low or off.

Close the lid and let the grill heat up for at least 5 minutes. You want the grates nice and hot before the corn goes on.

The Cook

Place the corn ribs cut-side down over direct heat. As they cook, they'll start to curl up—and that's exactly what you want.

Grill the corn ribs for about 4 minutes per side, rotating them as needed to get color on all the cut surfaces. Once you've built some beautiful char and color, move them over to the indirect side of the grill.

Close the lid and continue cooking for another 12 minutes, or until the corn is tender. Total cook time should be around 20 minutes.

The Honey BBQ Finish

During the final few minutes of cooking, give the corn ribs another light coating of spray butter.

Then hit them with a generous sprinkle of Kosmos Q Honey BBQ Wing Dust. The combination of buttery corn, savory SPG, and sweet Honey BBQ flavor takes these ribs completely over the top.

Let the seasoning settle onto the hot corn for a few minutes, then pull them off the grill.
