Hanger steak is one of those cuts that doesn't need much to be incredible. A hot charcoal fire, a bold steak seasoning, and a little butter with fresh herbs are all it takes to turn this underrated cut into something seriously delicious.
We're cooking this one hot and fast over hardwood lump charcoal on the Weber, building a deep crust on the outside while keeping the inside juicy and perfectly medium-rare. Finish it with a quick butter and herb rest, slice it against the grain, and you've got a steak that's tender, beefy, and packed with flavor.
Let's fire up the kettle.
Start by patting the hanger steak dry with paper towels.
If your hanger steak still has the center sinew or silverskin running down the middle, take a few minutes to remove it. This part doesn't break down during cooking, and leaving it in will make the steak chewy.
Using a sharp knife, carefully cut along both sides of the sinew. Once removed, you'll be left with two long strips of hanger steak.

Now let the steak rest at room temperature for about 30 minutes while you get the Weber fired up.
This gives the seasoning time to settle in and takes the chill off the meat before it hits the grill.
Fill a chimney starter with hardwood lump charcoal and light it up.
Let the charcoal burn until the coals are fully lit and covered with a light layer of ash, about 15 to 20 minutes.
Once the coals are ready, carefully pour them onto one side of the Weber kettle.
You're creating a hot direct-heat zone for searing, with the cooler side of the grill available if you need to slow things down.
With hanger steak, the charcoal provides plenty of flavor on its own. Keep it simple and let the beef do the talking.
Once the grill is hot and ready, it's time to cook.
Place the hanger steak directly over the hot coals.
Sear the steak for about 2 minutes per side, flipping frequently to build an even crust without overcooking the meat.
Don't walk away.
Hanger steak is a relatively thin cut, and it cooks fast. You're looking for a deep, flavorful crust while keeping the center juicy and medium-rare.
The total cook time should be around 6 to 8 minutes, depending on the thickness of your steaks and the heat of your charcoal.
Keep an eye on the internal temperature and pull the steak when it reaches 125°F.
It will continue to rise about 5 degrees while resting, bringing it right into that perfect medium-rare range.
Don't push hanger steak too far past medium. Once it gets overcooked, this cut can become tough and lose some of what makes it so good.
While the steak finishes cooking, lay out a large sheet of foil.
Add the unsalted butter, smashed garlic cloves, fresh rosemary, and fresh oregano to the center.
Once the hanger steak reaches 125°F, place it directly on top of the butter and herbs.
Wrap everything tightly in the foil and let the steak rest on a cutting board for 8 to 9 minutes.
As the steak rests, the butter melts into the meat while the garlic and fresh herbs add another layer of flavor.
This is an optional step, but it's absolutely worth it.
Now comes one of the most important parts of cooking hanger steak.
Take a look at the direction of the grain. Hanger steak has a noticeable grain that runs diagonally through the meat, and slicing it correctly makes a huge difference.
Slice against the grain at a 45-degree angle, cutting the steak into slices about ½ inch thick.
Cutting with the grain will make even a perfectly cooked hanger steak feel chewy, so don't skip this step.
Fan the slices out on your cutting board and finish with a pinch of flaky salt.
A deep charcoal crust. Juicy, medium-rare beef. Melted butter, garlic, and fresh herbs soaking into every bite.
This is a simple cook, but when hanger steak is treated right, it delivers huge beefy flavor with very little effort.
Get it sliced, get it on the table, and enjoy it while it's hot.
