Dr Pepper Shredded Beef BBQ

You Will Need:

  • 1 chuck roast
  • Kosmos Q Dirty Bird rub
  • Yellow mustard
  • Favorite BBQ sauce
  • 1 can of Dr Pepper

The Prep:

Start by cubing the chuck roast - this will create more surface area to be covered by the rub, thus maximising flavor. Generously coat all sides of the chuck roast with yellow mustard, and sprinkle with Dirty Bird rub evenly.

Once seasoned, let the roast rest while you preheat your smoker to 275°F (135ºC).

The Cook:

Place the seasoned chuck roast onto the preheated smoker and let it cook for about 3 hours. Keep an eye on the temperature, aiming for an internal temperature of 165°F (74ºC). Once it reaches this point, carefully remove the roast from the smoker.

Transfer the chuck roast into a dutch oven, then pour in the can of Dr Pepper and your favorite BBQ sauce. Cover the dutch oven with its lid and place it back onto the smoker for an additional 2 hours. This step allows the flavors to intensify and the meat to become tender and juicy.

The Payoff:

After the final two hours of cooking, check the internal temperature of the roast, aiming for around 200°F (93ºC). Once it's reached this temperature, carefully remove the dutch oven from the smoker. Using two forks, shred the beef. Let the shredded meat soak up all the delicious juices and flavors.
