EASY Loaded Baked Potato Salad

If you're a fan of loaded baked potatoes, you're in for a treat! This Loaded Baked Potato Salad takes all the classic flavors you love and transforms them into a simple to make, crowd-pleasing dish with creamy potatoes, crispy bacon, sharp cheddar cheese, and a zesty homemade ranch dressing come together for a taste sensation that'll have everyone asking for seconds.

You Will Need

  • 5 lbs of small red potatoes, halved or quartered
  • 1 bag of shredded mild cheddar cheese (grab an extra for good measure!)
  • 1 lb thick-cut bacon, chopped into bits
  • Kosmo's Q SPG Rub, to taste
  • 1 bunch of green onions
  • 2-3 bunches of chives
  • Sour cream to taste

For Homemade Ranch Dressing:

  • 1 packet of Ranch mix
  • 1 cup of milk
  • 1 cup of Duke's mayonnaise

The Prep

Start by bringing a large pot of water to a rolling boil and generously sprinkle in the SPG seasoning. While the water heats up, give the red potatoes a good chop. Once the water is bubbling, add in the potatoes and let them simmer away until they're perfectly fork-tender, which should take around 15 minutes.

While the potatoes are doing their thing, go ahead and get that bacon sizzling. In a trusty cast-iron skillet, cook it until almost crispy, then let it drain on a paper towel-lined plate. 

The Cook

Once your potatoes are tender, drain away the water and set them aside to cool. In the meantime, let's whip up that homemade ranch dressing. Follow the instructions on the ranch mix packet, combining it with milk and Duke's mayonnaise for a zesty, creamy dressing that will take your salad to the next level.

Now, it's time to bring it all together. Pour those drained and cooled potatoes into a mixing bowl (or return them to the pot you used to boil them). Add a portion of the ranch dressing, about half of the cheese, and those crispy bacon bits. Give it all a good stir to coat every potato with that flavorful dressing. If you find it needs a little extra dressing or a sprinkle of SPG, feel free to adjust to your taste.

The Payoff

Finally, it's time to add the finishing touches that will take this salad from great to outstanding! Chop up those fresh chives and green onions, and toss them into the mix. Add dollops of sour cream, to taste. Don't forget to garnish with a final sprinkle of cheese!
