Fire Roasted Salsa Verde

Fire Roasted Salsa Verde

This Fire Roasted Salsa Verde takes fresh tomatillos, jalapeños, poblanos, onion, and garlic and turns them into a smoky, flavor-packed salsa that's perfect for just about anything. Everything gets tossed with olive oil and Kosmos Q Garlic Jalapeño Rub, then roasted over high heat until blistered, tender, and lightly charred.

Once the vegetables are roasted, it's as simple as blending everything with fresh cilantro and lime juice. You can keep it smooth or leave it a little chunky for extra texture.

It's incredibly easy to make, loaded with fresh flavor, and perfect for taco night, backyard cookouts, or your next batch of grilled meats. Let's get to it.

You Will Need

  • 1½ lbs tomatillos, husked and rinsed

  • 2 jalapeños

  • 2 poblano peppers

  • ½ white onion

  • 4 garlic cloves

  • 2 tablespoons olive oil

  • 1 tablespoon Kosmos Q Garlic Jalapeño Rub

  • ½ cup fresh cilantro

  • Juice of 2 limes

The Prep

Start by husking and rinsing the 1½ pounds of tomatillos to remove any sticky residue.

Prepare the remaining vegetables by trimming the jalapeños, removing the stems from the poblanos, peeling the garlic cloves, and cutting the white onion into large chunks.

Place the tomatillos, jalapeños, poblanos, onion, and garlic in a large bowl.

Drizzle everything with 2 tablespoons of olive oil, then season with 1 tablespoon of Kosmos Q Garlic Jalapeño Rub.

Toss the vegetables until they're evenly coated with the oil and seasoning.

Now you've got everything ready to roast, and those fresh vegetables are about to pick up a whole lot of smoky, charred flavor.

The Grill Setup

Preheat your grill to medium-high heat. If you're using your oven instead, preheat it to 450°F.

For the grill, arrange the vegetables over the cooking grates where they can develop a nice char without burning too quickly.

If you're roasting in the oven, spread the vegetables out on a baking sheet in a single layer so they roast evenly.

The Roast

Grill or roast the vegetables for 12–15 minutes, turning occasionally so they blister and char on multiple sides.

Keep an eye on the garlic and smaller vegetables, as they may cook faster than the larger peppers and tomatillos.

You're looking for tender vegetables with softened interiors and lightly blackened spots on the outside. That char is what gives this salsa its signature fire-roasted flavor.

Once everything is roasted, remove the vegetables from the grill or oven and let them cool slightly before blending.

The Blend

Transfer the roasted tomatillos, jalapeños, poblanos, onion, and garlic to a blender.

Add ½ cup of fresh cilantro and the juice of 2 limes.

Blend everything until smooth, or pulse a few times if you prefer a slightly chunky salsa with more texture.

If the salsa is thicker than you'd like, blend a little longer to help everything come together.

The roasted vegetables bring a smoky, slightly sweet flavor, while the cilantro and lime brighten everything up. The Garlic Jalapeño Rub ties it all together with a savory kick.

The Taste Test

Give the salsa a taste and see how the flavors come together.

If you want a little more seasoning, add another pinch of Kosmos Q Garlic Jalapeño Rub and blend briefly to incorporate it.

For a brighter, tangier finish, squeeze in a little extra lime juice.

You can also adjust the heat by adding more roasted jalapeño if you prefer a spicier salsa. Blend again after making any adjustments, then taste one more time until it's just right.

The Serve

Transfer your Fire Roasted Salsa Verde to a serving bowl and get ready to put it to work.

Serve it with tortilla chips for an easy appetizer, spoon it over tacos and fajitas, or use it as a fresh topping for grilled chicken, steak, and other backyard favorites.

It's also fantastic alongside breakfast eggs or drizzled over burrito bowls for a bright, smoky finish.

Serve it warm or let it chill in the refrigerator for a cooler, refreshing salsa. Either way, those fire-roasted vegetables bring plenty of flavor to the table.

The Payoff

Fresh tomatillos, roasted peppers, garlic, and onion come together with Kosmos Q Garlic Jalapeño Rub, cilantro, and lime to create a salsa that's smoky, tangy, and full of fresh flavor.

It's easy to make, takes just a handful of ingredients, and works with everything from tortilla chips to your favorite grilled meats.

Make a batch for taco night, bring it to your next backyard cookout, or keep it on hand whenever a meal needs a little extra kick.

Fire up the grill, grab those chips, and enjoy this Fire Roasted Salsa Verde.
