1 lb 80/20 ground beef
1½ tablespoons Kosmos Q Double Pepper Cow Cover
4 slices sourdough bread or Texas toast
½ cup caramelized onions
4 slices Swiss cheese
4 slices cheddar cheese
2 tablespoons mayonnaise
2 tablespoons butter
Divide the 1 pound of ground beef into 2 equal portions.
Shape each portion into a large, thin patty, making them slightly larger than your bread slices to account for shrinkage during cooking.
Season both sides of the patties generously with 1½ tablespoons of Kosmos Q Double Pepper Cow Cover, making sure the seasoning is evenly distributed.
Have your 4 slices of Swiss cheese, 4 slices of cheddar cheese, and ½ cup of caramelized onions ready to go.
Spread the 2 tablespoons of mayonnaise over the inside of the bread slices, dividing it evenly among all 4 slices.
Butter one side of each slice of bread with the 2 tablespoons of butter. These buttered sides will go against the hot griddle to create that golden, crispy crust.
Now everything is prepped and ready for the griddle.
Preheat your griddle or cast-iron skillet over medium-high heat.
Once the cooking surface is hot, you're ready to cook the beef patties and toast the bread.
Keep everything close by so you can assemble the sandwiches while the cheese is still warm and melty.
Place the seasoned beef patties on the hot griddle.
Cook for about 3–4 minutes per side, or until the patties are nicely browned and cooked to your desired doneness. For food safety, ground beef should reach an internal temperature of 160°F.
During the final minute of cooking, top each patty with 2 slices of Swiss cheese and 2 slices of cheddar cheese.
Let the cheese melt over the beef, creating a rich, cheesy layer that will hold everything together.
Remove the patties from the griddle and set them aside briefly.
Place the buttered bread slices on the hot griddle with the buttered sides facing down.
Toast until the bread is golden brown and crispy, adjusting the heat as needed to prevent burning.
Once the first side is toasted, flip the slices and lightly toast the other side if desired.
Remove the bread from the griddle when both sides are crisp and the centers are warmed through.
Take 2 slices of toasted bread and place them with the mayonnaise-coated sides facing up.
Place one cheesy beef patty on each slice.
Divide the ½ cup of caramelized onions evenly between the two sandwiches, piling them over the melted cheese.
Top each sandwich with the remaining slices of bread, keeping the crispy, buttered sides facing outward.
Press each sandwich together gently so the layers hold in place.
Return the assembled patty melts to the griddle over medium heat.
Grill for another 1–2 minutes per side, pressing down gently with a spatula to help everything come together.
Flip carefully and cook until both sides are golden brown and crispy, and the cheese is completely melted.
Keep an eye on the bread so it develops a beautiful crust without getting too dark.
Once the sandwiches are hot, crisp, and packed with melted cheese, remove them from the griddle.
Transfer the patty melts to a cutting board.
Slice each sandwich in half and serve immediately while the bread is still crispy and the cheese is warm and gooey.
Pair them with French fries, crispy potato wedges, or your favorite pickles for a classic diner-style meal.
Juicy beef, bold peppery seasoning, sweet caramelized onions, and two kinds of melted cheese, all tucked between buttery, golden-brown bread.
The Kosmos Q Double Pepper Cow Cover brings the beef to life, while the Swiss and cheddar deliver that rich, cheesy goodness that makes a patty melt so satisfying.
