General Tso Pork Loin

You Will Need:

  • 2 Smithfield pork tenderloins
  • Kosmo's Q Sweet Honey Pecan rub
  • Kosmo's Q General Tso sauce
  • Sesame seeds
  • Green onions
  • Cherry wood pellets

The Prep

Trim the pork tenderloins with a boning knife, leaving just the meat on. Apply the Sweet Honey Pecan rub generously on all sides of the meat, and let it sit and absorb the flavors while you prepare the smoker.

The Cook

Preheat the smoker to 450°F (232°C) using cherry wood pellets. Once the smoker is hot, place the tenderloins on the grill and cook each side for a quick sear, rotating to sear evenly.

Now transfer the pork to a shallow pan. Pour a bottle of General Tso sauce over it, toss, and place the pan on the top shelf of the smoker. Bring the temperature down to 250°F (121°C).

Cook the pork like this for about 45 minutes, or until the internal temperature reaches 130°F (54°C). Then crank the temperature back up to 425°F (218°C) and throw the pork tenderloins directly over the heat. Keep cooking and basting with the warm sauce until the internal temperature reaches 140°F (60°C). Once the pork is cooked, remove it from the smoker and let it rest for a few minutes before slicing.

The Payoff

Slice the pork tenderloins with a sharp chef's knife, and sprinkle sesame seeds and green onions on top. For the perfect presentation, serve the slices with the warm General Tso sauce and a side of rice. You can also add an egg roll to complete the meal.

The tender pork with the smoky flavor from the cherry wood and the sweet and spicy combination of the rub and sauce are bound to become fan favorites at your place. It's a dish that looks fancy but is surprisingly easy to make! Don't be afraid to experiment with different rubs or sauces to create your own signature flavor.
