Kosmo's Favorite Thanksgiving Sides

Thanksgiving isn’t just about the turkey - the sides are what make the table shine. These three recipes are simple, cozy, and full of flavor, the kind that bring everyone back for seconds (and maybe thirds).

You Will Need

Thanksgiving Hominy

  • 3 cans hominy
  • 1 can cream of mushroom
  • 1 jar (15 oz) cheese whiz
  • 1 small can (4 oz) halved green chilies
  • 1 cup chopped bacon
  • 1 medium onion, diced
  • 1–2 cups shredded Chihuahua cheese (or your favorite melting cheese)
  • Kosmo's Q SPG rub, to taste
  • 1/2 cup crispy jalapeños, for topping

Classic Stuffing

  • 1 package Kosmo's Q Stuffing
  • 1/2 stick Kerrygold butter
  • Kosmo's Q Dirty Bird rub, to taste
  • 1 cup crispy onions, for topping

Mashed Potatoes & Gravy

  • 6 medium potatoes, smoked or baked
  • Kosmo's Q Classic Herb Turkey Gravy mix
  • 2 tbsp Kerrygold butter
  • 1/4 cup heavy whipping cream
  • 1 1/2 cups water
  • Kosmo's Q SPG rub, to taste
  • Fresh parsley, chopped (for garnish)

Thanksgiving Hominy

For the hominy casserole, start by mixing the hominy, cream of mushroom soup, cheese whiz, and halved green chilies in a large bowl. In a skillet, sauté the chopped bacon over medium heat until it’s halfway cooked, then add the diced onion. Continue cooking until the bacon is crisp and the onion translucent. Pour the entire bacon-onion mixture, grease and all, into the hominy bowl and mix thoroughly.

Transfer the mixture into a cast iron skillet or oven-safe dish, spreading it evenly. Preheat your oven to 375°F (190°C). Let the dish bake for about 20 minutes to heat through, then remove it to season with Kosmo’s Q SPG rub. Give it a gentle fold to mix in the seasoning, then top generously with shredded cheese and crispy jalapeños. Return it to the oven for another 20 minutes, or until the cheese is bubbly and golden.

Thanksgiving Stuffing

While the hominy bakes, you can move on to the stuffing. In a small saucepan, bring 2 cups of water and 1/2 stick of Kerrygold butter to a boil. Once boiling, remove from heat and stir in the Kosmo’s Q Stuffing mix. Season with a light sprinkle of Dirty Bird rub for extra depth. Transfer the mixture into a casserole dish, top with crispy onions, and place in the oven for 20 minutes, or until the top is lightly browned and crisp around the edges.

Mashed Potatoes & Gravy

For the mashed potatoes, smoke or bake the potatoes until they’re fork tender, rubbed with a touch of olive oil and a dusting of Dirty Bird seasoning. Once done, remove them from the heat and let them cool slightly before handling. Peel them if you prefer a smoother mash, or leave the skin on for a rustic texture. Mash the potatoes in a large bowl with 2 tablespoons of Kerrygold butter, a splash (about 1/4 cup) of heavy cream, and SPG rub to taste. Spoon the mashed potatoes into a casserole dish and top with fresh chopped parsley.

For the final touch, prepare the gravy. In a small pan, combine Kosmo’s Q Classic Herb Turkey Gravy mix with 1 1/2 cups of water. Whisk until smooth and well combined, then heat over medium until it thickens to your liking. Drizzle over your mashed potatoes or serve it on the side in a gravy boat.

Once all three dishes are ready, it’s time to bring them together on the table. The creamy, cheesy hominy casserole, savory stuffing with that hint of spice, and buttery mashed potatoes with rich gravy make a trio that could easily steal the spotlight from the turkey.
