Start game night with a bang - these loaded potato coins are worth their weight in gold!

This is a quick cook, as any good starter should be. So, have your ingredients at the ready - grate the cheddar, dice the onions, and clean the potatoes.
Next, preheat the oven to 400ºF (204ºC). Once up to temp, bake the potatoes for approximately 1 hour. When ready, let them cool down enough so they can be handled without burning your fingers.
Slice the potatoes into coins of about 1/4 inch (0.6 cm) thick. Season with the Garlic Jalapeno rub, and top with shredded cheese and bacon bits. Then sprinkle with some more rub for an extra kick.
To finish these beauties off, place them in the air fryer at 380ºF (193ºC) for 3 minutes, or until the cheese has melted to your preference. Air fryers can vary in their strength, so keep an eye on your coins!
Top the loaded potato coins with a dollop of sour cream, sliced green onions, and serve while still warm. Enjoy!
