Pan Seared Ribeye w/ Bacon Wrapped Asparagus

When it's cold outside, or you just want a nice pan seared steak, you can't go wrong with this. Basted in butter and herbs, with a side of bacon wrapped asparagus to keep your doctor happy (you gotta get your greens!), you'll love this recipe! You Will Need

The Prep

A quick and easy recipe means we want as little prep work as possible. In that spirit, let's make some asparagus wraps. First, remove the ends of the asparagus - just bend the end off, it will break where it needs to break. Then grab a lil bundle of 3 asparagus spears, and wrap it in a slice of thick cut bacon. Get a toothpick in there to keep it in place. Give them a hit of SPG, or whatever you have at home, and they're ready to go!

The Cook

Toss the bacon wrapped asparagus bundles on a wire rack, and put them on an air fryer (400ºF - 205ºC) for around 7-10 minutes. When the bacon is crispy, they're done.

Next, get a cast iron and heat it up with a lil bit of grape seed oil. While it's heating up, hit the steaks with a nice coat of Cow Cover, followed by some Texas Beef. Cover both sides and pat the rub in.

This is where the magic happens. Throw the steaks in the hot pan, and sear each side for 2 minutes. You're looking for that nice golden crust that makes your mouth water. Then reduce the heat to medium, and add the butter, garlic, and herbs for that buttery baste.

The Payoff

When the butter has melted, start basting: use a spoon to continuously scoop some of that buttery goodness over the steaks. Keep going until your steaks are ready. We pulled ours at 145ºF (68ºC) for a medium rare. let the steaks rest.

Serve alongside the bacon wrapped asparagus, and enjoy.
