Pulled Pork Smashed Potatoes

Turn that leftover pulled pork into a new way to have dinner on the table, a quick, filling, and delicious BBQ-flavored recipe so nothing goes to waste!

You Will Need

The Prep

This recipe takes for granted that you've got some leftover pulled pork - maybe from the day before, or some you threw in the fridge after your last cookout. But don't let that stop you from smoking a pork butt just to make pulled pork smashed potatoes! 

Before we begin, let's give our potatoes some flavor. Put them in a ziplock gallon bag, with olive oil and minced garlic. Seal, shake well, then add SPG and Dirty Bird rubs and repeat.

The Cook

Let's get this party started! Preheat your smoker or oven to 350ºC (177ºC). Once it's up to temp, pour potatoes on a baking dish, and put in oven or smoker. Let them cook for about 20 minutes, until soft enough to smash.

In the meantime, warm up the pulled pork. Once the potatoes are ready, get them off the cooker, spread them out good and smash with a utensil.

The Payoff

Top the mashed potatoes with pulled pork, chopped green onion and as much cheese as you like! Finally, give it another dusting of the two rubs used before, and place it back in the oven or smoker until the cheese is golden.
