These smoked lemon pepper wings are about to become your new favorite. They’re incredibly juicy on the inside, packed with bold lemon pepper flavor, and finished with crispy, smoky skin. The secret starts with a simple Chicken Soak, then we crank up the heat at the end to get that perfect texture without ever touching a fryer. Let’s get to it.
The secret to incredible wings starts before they ever hit the smoker.
Mix the Chicken Soak with water according to the package directions. Submerge the wings completely and refrigerate for at least 1 hour. Overnight is even better.
This is what keeps the inside incredibly juicy while we work on getting that crispy skin on the outside. This is the secret Wingstop doesn't tell you.
When you're ready to cook, remove the wings from the soak and pat them dry. There's no need to season them yet—the soak has already done the work inside.
Fire up your pellet smoker and set the temperature to 275°F (135°C).
For this cook, go with hickory or pecan pellets. You want a slightly bolder smoke that can stand up to the bright lemon pepper flavor.
Place the wings directly on the smoker grate in a single layer, making sure they're not touching. Close the lid and let them smoke for 20 minutes without opening it.
After 20 minutes, flip the wings and continue smoking for another 20 minutes.
At this point, the wings should have developed some beautiful color and the skin should be starting to tighten up.
Now it's time to crank up the heat.
Increase the smoker temperature to 375°F (190°C) and cook for another 15 minutes. This higher temperature helps crisp up the skin without having to fry the wings.
Cook the wings until they reach an internal temperature of 205°F (96°C). Wings can handle a higher finishing temperature than other cuts of chicken, and taking them higher gives you that tender, juicy texture you're looking for.
This is where the magic happens.
Remove the wings from the smoker and place them in a large bowl. Add a heavy coat of Lemon Pepper Wing Dust, then drizzle over the melted butter.
Now toss the wings in the bowl until every wing is completely coated.
You want that Lemon Pepper Wing Dust covering every surface, with the melted butter helping everything stick to those smoky, crispy wings.
Look at that coating. Smoky, crispy wings covered in buttery lemon pepper goodness.
