These Smash Burger Tacos are what happens when a classic smash burger meets your favorite taco. Juicy 80/20 ground beef gets smashed directly onto a flour tortilla, creating a crispy, caramelized crust with melted American cheese and all your favorite burger toppings.
They're quick, easy, packed with flavor, and cooked entirely on the Blackstone. Finish them with a homemade smash sauce, fresh lettuce, tomatoes, and onions, and you've got a burger taco that's going to disappear fast. Let’s get to it.
The secret to taking these Smash Burger Tacos to the next level starts with the sauce.
In a small bowl, combine the sweet relish, SPG, mayonnaise, ketchup, and yellow mustard. Mix everything together until smooth and fully combined.
Refrigerate the sauce for at least 1 hour before cooking. This gives all those flavors time to come together and creates that classic, tangy burger sauce that works perfectly with the crispy beef and melted cheese.
Don't skip this part—you'll want plenty of this sauce on every taco.
Divide the 80/20 ground beef into 8 loose portions, about 4 ounces each.
Place one portion of beef onto each flour tortilla and gently spread the meat across the surface. You want the beef to cover most of the tortilla without packing it down too tightly.

Now you've got everything prepped and ready to hit the Blackstone.
Fire up your Blackstone and get it screaming hot over high heat.
You want the surface hot enough to create that deep, crispy smash burger crust as soon as the beef hits the griddle. A proper smash burger needs serious heat, so don't rush this step.
Once the griddle is hot and ready, it's time to cook.
Place each tortilla beef-side down onto the hot Blackstone. Press it firmly so the beef makes full contact with the cooking surface.
Now leave it alone.
Don't lift the tortilla to check underneath. Let the beef cook for about 2 minutes, or until the edges are deeply browned and crispy.
Once you have that beautiful smash burger crust, flip the taco so the tortilla is now facing the griddle.
Immediately place a slice of American cheese over the beef.
Cover the taco and cook for another 30 to 40 seconds, just until the cheese is fully melted and the tortilla is warm and golden brown.
The cheese should be melting around the edges, and the beef should have that crispy, caramelized crust that makes a smash burger so good.
This is where everything comes together.
Start with a generous drizzle of your homemade smash sauce. Top each taco with shredded iceberg lettuce, diced Roma tomatoes, and finely diced white onion.
Fold it up and serve immediately.
