Stuffed Bell Pepper Bites

The first time you put these stuffed bell pepper bites in front of your guests, you'll know you've hit a home run! Super simple to prepare and cook, should be ready in under 30 minutes total.

The Prep

Let's get right to it! Preheat your cooker or oven to 360ºF (182ºC). In the meantime, wash and dry the bell peppers, peel and chip your onion and garlic, and measure out the rubs, sauce, and shredded mozzarella cheese.

Next, chop the top off of the bell peppers, and remove the seeds. In a pan, bake the peppers upside down in the oven while you prepare the stuffing, for 7-10 minutes (just to soften the peppers).

The Cook

Brown the ground beef in a skillet, and add the onion, rice, garlic and tomato sauce. Season with SPG Rub, Sizzlin Burger Rub, and Garlic Jalapeno. Mix in and cook for 3 minutes.  

Pull the peppers out of the oven and stuff them. Put them in an oven dish and cover with foil. Bake for 12 minutes. Then take foil off and cook for an additional 10 minutes, or until peppers are tender.  

The Payoff

When done, take the stuffed bell pepper bites out of the oven and let them cool. Top with Mozzarella Cheese and sprinkle one last time with The Best Garlic Jalapeno Rub on top - Enjoy!
