These The Easiest Garlic Jalapeño Shrimp Meal Prep bowls are packed with juicy grilled shrimp, bold garlic-jalapeño flavor, fluffy jasmine rice, and fresh vegetables. They're quick to prepare, easy to portion, and perfect for having a flavorful meal ready to go throughout the week. Let's get to it.
2 lbs Large Shrimp, Peeled and Deveined
2 Tablespoons Kosmos Q Garlic Jalapeño Rub
1 Tablespoon Olive Oil
2 Cups Cooked Jasmine Rice
2 Cups Cucumber, Diced
1 Cup Cherry Tomatoes, Halved
2 Tablespoons Tzatziki
The key to flavorful shrimp starts with a simple seasoning that brings plenty of garlic and jalapeño flavor.
Place the 2 lbs of large, peeled and deveined shrimp in a mixing bowl. Drizzle with 1 tablespoon of olive oil and season evenly with 2 tablespoons of Kosmos Q Garlic Jalapeño Rub.
Toss the shrimp until every piece is evenly coated. Let them sit for a few minutes while you get the grill fired up.
Preheat your grill to medium-high heat, around 400–450°F (204–232°C).
Place the Kosmos Q Mesh BBQ Grill Mat over the cooking grates. This gives the shrimp a secure cooking surface while still allowing them to pick up that delicious grilled flavor.
Place the seasoned shrimp on the grill mat and close the lid.
Cook the shrimp for about 4 minutes on the first side. Flip each shrimp and continue cooking for another 4 minutes, or until the shrimp are opaque, cooked through, and nicely grilled.
Keep an eye on them as they cook. Shrimp don't take long, and you want them tender and juicy rather than overcooked.
While the shrimp are cooking, divide the 2 cups of cooked jasmine rice evenly among your meal prep containers.
Add the diced cucumber and halved cherry tomatoes, distributing them evenly between the containers.
Once the shrimp are finished, place them on top of the rice and vegetables. Add the tzatziki to each container or keep it on the side.
That's it! You've got an easy meal prep packed with juicy shrimp, bold garlic-jalapeño flavor, fresh vegetables, fluffy rice, and creamy tzatziki.
Let the meals cool before sealing the containers, then store them in the refrigerator for up to 4 days.
When you're ready to eat, grab a container, add a little extra tzatziki if you like, and enjoy. Simple prep, quick cooking, and big flavor.
