This Butter Bath Steak is all about a beautifully seasoned, thick-cut steak grilled hot and fast, then finished with a rich butter bath while it rests. The high-heat grill creates a flavorful crust, while the melted butter keeps the steak juicy and adds an extra layer of richness. It's simple, beginner-friendly, and packed with steakhouse-style flavor. Let's get to it.

You Will Need

The Prep

Start with a thick-cut NY strip for the best results. Pat the steak dry with paper towels to remove any excess moisture.

Season the steak generously on all sides with 2 tablespoons of Kosmos Q Texas Beef Rub, making sure the seasoning is evenly distributed.

Let the steak rest at room temperature for 20–30 minutes while you get the grill ready.

The Grill Setup

Preheat your grill to 500–550°F for direct cooking.

Clean the cooking grates and lightly oil them before placing the steak on the grill. You want the grill hot and ready to create a good sear on the steak.

The Cook

Place the seasoned NY strip directly over the heat and close the lid.

Cook for about 1½ minutes on the first side, then flip and cook for another 1½ minutes.

Continue flipping the steak every 1½ minutes for at least 4 total flips, or until the internal temperature reaches 125°F for medium-rare.

If you prefer a different level of doneness, continue cooking until the steak reaches your desired internal temperature.

The Butter Bath

Once the steak reaches your desired temperature, remove it from the grill.

Lay down a sheet of aluminum foil and place 4 tablespoons of butter in the center. Set the hot steak directly on top of the butter, then place the remaining 4 tablespoons of butter on top of the steak.

Wrap the steak tightly in the foil, allowing the butter to melt over the steak as it rests.

Let the steak rest in the butter bath for about 10 minutes. This gives the juices time to redistribute while the melted butter adds plenty of richness.

The Payoff

Unwrap the steak and slice it against the grain.

Serve immediately and enjoy a juicy, thick-cut NY strip with a flavorful crust and a rich buttery finish.
