10,000 Dollar Steak Recipe

This recipe won $10,000 at the 2015 World Steak Cook-off - and with this recipe, anyone can give Gordon Ramsay a run for his money! It really is that easy.

You Will Need

The Prep

Now in the video for this recipe, we did both a competition and a backyard style steak, side by side. Here we'll go over just the comp steak, so if you want to see the other one too, scroll down to the youtube link.

The first thing you have to look at when cooking a competition steak is presentation. But this (despite what some may tell you) does not mean you have to butcher it into a perfect puck. Simply cut off any sharp corners and hard fat, then use butcher's twine around the edge to tie it into shape.

Next up, we're marinating the steak. Simply put it in a large enough zip top bag, and pour in some Brisket Mop sauce. Push out the air, seal, and swirl it around for good coverage. Then let it sit in the fridge for 30 minutes.

The Cook

In the meantime, set up your grill, and let it get as hot as possible (ours goes up to 600ºF / 315ºC).

When the steak is done marinating, bring it out of the Brisket Mop. Pat it dry with a paper towel (don't rinse!) and season with your favorite combo. We went with Cow Cover, Dirty Bird Hot, and finally Texas Beef.

Now throw that steak on the grill. If you want to get those killer grill marks, be mindful of how you position it on the grate.

Rotate the steak by 45 degrees after 1 min 15 seconds. Flip after an equal amount of time (2 minutes 30 seconds per side). Repeat for the other side, but start monitoring internal temperature.

When core temp hits 127ºF (53ºC), baste over the top with the melted butter. Finally, when both sides are done, and you have reached your desired doneness, pull the steak off the heat.

The Payoff

Let the steak rest for 10-15 minutes in a foil pan or something with a lid. When it's done resting, dust the meat lightly with a pinch of Reserve Blend Brisket Injection for extra flavor. Don't forget to remove the twine!

Time to turn that sucker in, and get paid! Whether it's to actual competition judges, your family/friends, or that jealous neighbor who thinks they can cook a better steak, you're a winner.
