Crispy Potato Salad

Crispy Potato Salad

This Crispy Potato Salad with Killer Bee Rub & Honey Jalapeño BBQ Sauce takes classic potato salad and gives it a seriously flavorful BBQ twist. Golden, crispy baby gold potatoes get tossed in Kosmos Q Dirty Bird Rub, roasted until crunchy on the outside and tender on the inside, then mixed with a creamy, tangy dressing.

The combination of mayonnaise, Dijon mustard, apple cider vinegar, and Kosmos Q Honey Jalapeño BBQ Sauce brings just the right balance of creamy, sweet, tangy, and spicy flavor. Add in crunchy dill pickles, fresh green onions, and parsley, and you've got a potato salad that brings something special to the table.

It's easy to make, packed with texture, and perfect for backyard BBQs, family cookouts, or your next weekend gathering. Let's get to it.

You Will Need

For the Potatoes

  • 2 lbs baby gold potatoes, halved

  • 2 tablespoons olive oil

  • 2 tablespoons Kosmos Q Dirty Bird Rub

  • Salt and pepper, to taste

For the Dressing

The Prep

Start by washing the 2 pounds of baby gold potatoes and cutting them in half. Try to keep the pieces relatively similar in size so they cook evenly.

Place the halved potatoes in a large pot of salted water and bring to a boil.

Boil for 12–15 minutes, or until the potatoes are fork-tender but still hold their shape. Drain them well and let them steam dry for a few minutes. Removing excess moisture helps the potatoes crisp up in the oven.

Transfer the potatoes to a large bowl and drizzle with 2 tablespoons of olive oil.

Season with 2 tablespoons of Kosmos Q Dirty Bird Rub, tossing gently until the potatoes are evenly coated. Add salt and pepper to taste, keeping in mind that the rub already brings plenty of flavor.

Now they're seasoned and ready to get crispy.

The Oven Setup

Preheat your oven to 425°F.

Spread the seasoned potatoes onto a baking sheet in a single layer, leaving a little space between the pieces. Avoid overcrowding the pan, as this can cause the potatoes to steam instead of roast.

Once the oven is up to temperature, slide the baking sheet in and let the heat work its magic.

The Roast

Roast the potatoes at 425°F for 25–30 minutes, flipping them halfway through cooking.

Keep an eye on them during the final few minutes. You're looking for golden-brown edges and a crispy exterior, with soft, tender centers.

Once they're nicely browned, remove the potatoes from the oven and let them cool slightly while you prepare the dressing.

That little bit of cooling helps keep the dressing creamy while allowing the potatoes to hold on to some of their crispiness.

The Dressing

While the potatoes are roasting, grab a large mixing bowl.

Add ½ cup of mayonnaise, 2 tablespoons of Kosmos Q Honey Jalapeño BBQ Sauce, 1 tablespoon of Dijon mustard, and 1 tablespoon of apple cider vinegar.

Whisk everything together until smooth and creamy.

The mayonnaise gives the dressing its rich base, the Dijon mustard adds a little sharpness, and the apple cider vinegar brings a bright, tangy kick. The Honey Jalapeño BBQ Sauce ties it all together with a touch of sweetness and a little heat.

Next, stir in the ¼ cup of chopped dill pickles, 2 sliced green onions, and 2 tablespoons of chopped fresh parsley.

Give everything a good mix so those fresh, tangy flavors are evenly distributed throughout the dressing.

The Build

Once the potatoes have cooled slightly, add them to the bowl with the dressing.

Gently toss everything together until the potatoes are coated in that creamy, BBQ-packed mixture.

Take your time with this step. You want the dressing to cling to the potatoes without breaking them apart or crushing those crispy edges.

The warm potatoes soak up some of the dressing's flavor, while the pickles and green onions bring a fresh crunch that balances the creamy sauce.

If you like a little extra BBQ flavor, save a small drizzle of Kosmos Q Honey Jalapeño BBQ Sauce for the final touch.

The Serve

Transfer the potato salad to a serving bowl or platter.

Finish with a sprinkle of fresh parsley and, if desired, a light drizzle of Kosmos Q Honey Jalapeño BBQ Sauce.

Serve it warm for the best contrast between the crispy potatoes and creamy dressing, or let it cool slightly before serving.

It's a great side dish alongside smoked brisket, grilled chicken, burgers, ribs, or just about anything coming off the grill.

The Payoff

Crispy potatoes, bold seasoning, and a creamy dressing with just the right balance of sweet, tangy, and spicy flavor.

The Kosmos Q Dirty Bird Rub brings the potatoes to life, while the Honey Jalapeño BBQ Sauce adds a sweet heat that makes this potato salad stand out from the usual cookout side dishes. The dill pickles, green onions, and fresh parsley finish things off with a little crunch and freshness in every bite.

It's simple to prepare, uses everyday ingredients, and delivers big BBQ flavor without needing a smoker or grill.

Make a batch for your next backyard cookout, pile it next to your favorite BBQ meats, and get ready for everyone to ask what makes this potato salad so good.
