They're easy to make, perfect for busy mornings, and hearty enough to keep everyone satisfied. Whether you're feeding the family or meal-prepping breakfast for the week, these burritos are always a great way to start the day. Let's get to it.

You Will Need

  • 1 lb breakfast sausage

  • 8 large eggs

  • 1½ Tbsp Kosmos Q Double Pepper Cow Cover

  • 1½ Tbsp Kosmos Q SPG

  • 1 cup shredded cheddar cheese

  • 1 cup frozen or cooked breakfast potatoes

  • ½ cup diced bell pepper

  • ½ cup diced onion

  • 4 large flour tortillas

  • ½ cup salsa

  • 2 Tbsp butter or oil

  • Optional: avocado, jalapeños, and sour cream

The Prep

Start by getting all your ingredients ready before heating up the skillet.

Dice the bell pepper and onion, shred the cheddar cheese if needed, and set aside the breakfast potatoes. If you're using frozen potatoes, have them ready to go straight into the skillet.

Crack the 8 large eggs into a bowl and whisk them until the yolks and whites are fully combined.

Season the 1 lb of breakfast sausage with 1½ tablespoons of Kosmos Q Double Pepper Cow Cover, making sure the seasoning is distributed evenly as the sausage cooks.

Measure out 1½ tablespoons of Kosmos Q SPG for the eggs.

Now you've got everything prepped and ready to go. Time to get that skillet hot and start building some seriously satisfying breakfast burritos.

The Sausage

Place a large skillet over medium-high heat and add the breakfast sausage.

Cook the sausage, breaking it apart with a spatula as it browns, until it's fully cooked through with no pink remaining.

Season it with the Kosmos Q Double Pepper Cow Cover, stirring to distribute the seasoning evenly throughout the meat.

Once the sausage is browned and cooked through, leave it in the skillet so the vegetables can pick up some of that savory flavor.

The Veggies

Add the diced ½ cup of bell pepper and ½ cup of onion to the skillet with the cooked sausage.

Stir everything together and cook for 3–4 minutes, until the vegetables begin to soften.

Let the peppers and onions cook in the sausage drippings so they soak up all that delicious flavor.

The Potatoes

Add 1 cup of frozen or cooked breakfast potatoes to the skillet.

Stir them into the sausage and vegetable mixture, spreading the potatoes across the skillet so they heat evenly.

Cook until the potatoes are heated through and slightly crispy on the outside.

If you're using frozen potatoes, give them enough time to cook through before moving on to the eggs.

The Eggs

Pour the whisked eggs into the skillet with the sausage, vegetables, and potatoes.

Season the eggs with 1½ tablespoons of Kosmos Q SPG, then gently stir everything together.

Cook over medium heat, stirring occasionally, until the eggs are just set and cooked through. Avoid overcooking them, since they'll be wrapped up and toasted again in the skillet.

Once the eggs are ready, remove the skillet from the heat.

You've now got a hearty breakfast filling packed with seasoned sausage, fluffy eggs, tender vegetables, and potatoes with just the right amount of crispiness.

The Build

Warm the 4 large flour tortillas in a dry skillet or microwave until they're soft and flexible enough to roll without tearing.

Lay each tortilla flat on a clean work surface.

Divide the sausage, egg, vegetable, and potato mixture evenly among the 4 tortillas, placing the filling in the center of each one.

Top each portion with shredded cheddar cheese and a spoonful of salsa.

If you want to take things up a notch, add sliced avocado, diced jalapeños, or a little sour cream before rolling.

Fold the left and right sides of each tortilla toward the center, then fold the bottom edge up and over the filling. Roll each tortilla tightly away from you, keeping the sides tucked in so the filling stays inside.

Now you've got four loaded breakfast burritos ready for their final trip to the skillet.

The Toast

Place a clean skillet or griddle over medium heat and add a little butter or oil.

Once the skillet is hot, place each burrito seam-side down.

Toast for 1–2 minutes per side, turning carefully until the tortillas are golden brown and crispy all around.

Starting seam-side down helps seal the burritos and keeps them from opening up while they toast.

Work in batches if needed, adding a little more butter or oil to the skillet between batches.

Once the tortillas are crisp and the cheddar has melted inside, remove the burritos from the heat.

The Serve

Transfer the toasted breakfast burritos to a cutting board and let them rest for a minute before serving.

Slice each burrito in half if you want to show off that cheesy, sausage-packed filling.

Serve them warm with extra salsa on the side, along with avocado, jalapeños, or sour cream if desired.

They're great on their own, but a little extra salsa for dipping makes every bite even better.

The Payoff

Savory sausage, fluffy eggs, crispy potatoes, sautéed peppers and onions, and melted cheddar cheese, all wrapped in a golden, crispy tortilla.

The Kosmos Q Double Pepper Cow Cover brings bold flavor to the sausage, while SPG keeps the eggs seasoned just right. Every bite delivers a satisfying mix of textures and flavors that makes these breakfast burritos hard to beat.

They're easy to customize, simple to prepare, and perfect for weekend breakfasts, brunch, or meal prep when you want something hearty and delicious ready to go.

Fire up that skillet, load up those tortillas, and enjoy these Breakfast Burritos.
