I chose 2 turkeys each just under 14 pounds, and using Kosmos turkey brine, brined them overnight. I spatchcocked them, removing the back pieces and the necks and giblets I saved. I then rinsed the turkeys off with cool fresh water and patted them dry. Then it's time for seasoning them generously on both sides with Dirty Bird seasoning, with a lighter layer of Honey Killer Bee. They can then rest for about 30 minutes to let the seasoning work, then onto the smoker with hickory at 275 degrees. At about 1 hour and 2 hours in I basted them with melted butter. At about 2 hours and 45 minutes then were perfect and up to temperature, so I removed them to a banquet pan and lightly covered them to rest for a hour which actually raises and evens the internal temp a bit. Finally we brought them out and served the beautiful birds on our favorite Blue Ridge pottery turkey platter. These turkeys, with brining and seasoning and smoking are mouth-watering delicious. Our friends and loved ones who haven't had turkey like this are amazed at how moist, tender and savory it is.

Use it when frying chicken. First put a rub of Dirty Bird, then ginger, salt and pepper, garlic. Some butter or combo of butter and oil for frying. Fry low heat, and then cover and let “cook” for 40 to 50 minutes. Then add diced tomatoes [at least one can, sometimes 2] and let simmer until ready to serve. Serve preferably with pasta, though rice is also good. The Dirty Bird adds a bite and flavor that keeps my guests coming back for more. Time after time.
