The key to flavorful beer can chicken starts with getting the bird dry and seasoning it generously.
Pat the 1 whole chicken dry with paper towels. Drizzle the chicken with 1 tablespoon of olive oil, rubbing it evenly over the entire bird.
Season the chicken generously on all sides and inside the cavity with 2 tablespoons of Kosmos Q Dirty Bird Hot Rub. Make sure the seasoning is evenly distributed for maximum flavor.
Let the seasoned chicken sit for 15–20 minutes while you get the grill fired up.
Fill the Kosmos Q Ceramic Chicken Stand about halfway with your favorite beer.
Carefully place the seasoned chicken onto the stand so it sits upright and securely. Make sure the chicken is balanced before moving it to the grill.
Set your grill up for indirect cooking at 300°F (149°C).
If you're using a charcoal grill, bank the coals to one side of the grill and place the chicken on the cooler side. If you're using a pellet grill, simply preheat it to 300°F.
The goal is to cook the chicken with indirect heat so it can slowly roast while developing beautifully browned skin.
Carefully place the chicken and stand on the grill over indirect heat and close the lid.
Cook the chicken for about 1½–2 hours, or until the breast reaches 165°F (74°C) and the thighs reach 175°F (79°C) internally.
Rotate the chicken halfway through the cook if needed to help it brown evenly on all sides.
Keep an eye on the internal temperature toward the end of the cook. The thermometer is your best friend here—you want juicy meat without overcooking it.
Once the chicken reaches the proper internal temperatures, carefully remove it from the grill and take the chicken off the stand.
Let the chicken rest for 10–15 minutes before carving. This gives the juices time to redistribute so every bite stays tender and juicy.
