Let's get to it!
6 medium russet potatoes
1–2 Tbsp Kosmos Q Garlic Jalapeño Rub
½ cup Kosmos Q OP X-1 BBQ Sauce, plus more for finishing
8 slices bacon, cooked and chopped
2 cups shredded cheddar cheese
½ cup sour cream
3 green onions, sliced
2 Tbsp melted butter
1 Tbsp olive oil
Start by giving the 6 russet potatoes a good scrub under running water to remove any dirt. Pat them dry with paper towels.
Rub each potato with 1 tablespoon of olive oil, making sure the skins are lightly coated all the way around.
Preheat your oven or grill to 400°F.
Place the potatoes in the oven or on the grill and cook for 40–45 minutes, or until they're fork-tender. The exact cooking time will depend on the size of your potatoes.
Once the potatoes are cooked, remove them from the heat and let them cool enough to handle.
Slice each potato in half lengthwise. Using a spoon, carefully scoop out most of the potato flesh, leaving about ¼ inch of potato attached to the skin so each shell holds its shape.
Save the scooped-out potato for another recipe, or turn it into mashed potatoes for an easy side dish.
Brush the inside and outside of each potato skin with 2 tablespoons of melted butter.
Season the skins generously with 1–2 tablespoons of Kosmos Q Garlic Jalapeño Rub, making sure each one gets an even coating.
Return the buttered and seasoned potato skins to the oven or grill at 400°F.
Cook for 8–10 minutes, or until the edges start to turn golden brown and crispy.
This extra step helps firm up the potato skins so they can hold all that cheese and bacon without becoming too soft.
Keep an eye on them as they crisp up. You want the edges lightly browned and the shells sturdy enough to handle all the toppings.
Remove the crispy potato skins from the oven or grill.
Fill each skin with shredded cheddar cheese, dividing the 2 cups evenly among the potato halves.
Sprinkle the 8 slices' worth of cooked, chopped bacon over the cheese.
Now drizzle ½ cup of Kosmos Q OP X-1 BBQ Sauce over the loaded potato skins, spreading it across the tops so every bite gets a little of that sweet, smoky BBQ flavor.
Don't be shy with the toppings. The combination of melted cheddar, crispy bacon, and OP X-1 is what takes these potato skins to the next level.
Return the loaded potato skins to the oven or grill at 400°F.
Cook for another 5–7 minutes, or until the cheddar cheese is completely melted and bubbling.
Keep the skins on the heat just long enough for the cheese to melt and the bacon to warm through without burning the edges.
Once everything is hot, bubbly, and looking delicious, remove the potato skins from the heat.
Let the loaded potato skins cool for a minute or two before adding the final toppings.
Spoon a little sour cream over each potato skin, dividing the ½ cup evenly among them.
Sprinkle the sliced green onions over the top for a fresh, colorful finish.
Finish with another drizzle of Kosmos Q OP X-1 BBQ Sauce for an extra hit of smoky, sweet flavor.
Now you've got crispy potato skins loaded with gooey cheddar, savory bacon, creamy sour cream, fresh green onions, and bold BBQ sauce.
Arrange the loaded potato skins on a serving platter and serve them while they're still warm.
Put out some extra OP X-1 BBQ Sauce on the side for dipping, and let everyone dig in.
These are perfect for game day, backyard cookouts, parties, or whenever you need an appetizer that delivers big flavor without a lot of fuss.
Crispy potato skins, melted cheddar, smoky bacon, and the bold flavor of Kosmos Q Garlic Jalapeño Rub all come together with a generous finish of OP X-1 BBQ Sauce.
