You Will Need

The Prep

Remove the 2 cans of Spam from their packaging and cut each one into 1-inch cubes.

Place all of the Spam cubes into a large mixing bowl.

Sprinkle 2 tablespoons of Kosmos Q Honey Killer Bee evenly over the Spam.

Toss the cubes until every piece is evenly coated with the seasoning.

The Honey Killer Bee Rub adds that sweet, savory flavor while helping the Spam develop a beautiful golden color as it smokes.

The Smoker Setup

Preheat your smoker or grill to 275°F.

This recipe works great on a pellet grill, charcoal smoker, or kettle grill, as long as you're cooking with indirect heat.

Once the smoker is heated and holding steady at 275°F, you're ready to get those Spam cubes on the grate.

The Smoke

Arrange the seasoned Spam cubes on a wire rack or place them directly on the grill grates.

Leave a little space between each cube so the smoke can circulate around them.

Close the lid and smoke the Spam for about 30 to 40 minutes.

You're looking for the edges to start darkening and the cubes to develop a rich golden color.

This first stage is where the smoke really starts working its way into the Spam and building that delicious BBQ flavor.

Build the Burnt Ends

Once the Spam cubes have picked up some color, transfer them to an aluminum pan.

Add 0.5 cup of Kosmos Q OP X-1 Competition BBQ Sauce, 2 tablespoons of brown sugar, and 2 tablespoons of cubed butter.

Toss everything together until the Spam cubes are completely coated in the sauce mixture.

The butter adds richness, while the brown sugar helps create that thick, sticky glaze that makes burnt ends so good.

The Finish

Return the pan to the smoker and cook for another 30 to 40 minutes.

Stir the Spam cubes once halfway through the cook to make sure they're evenly coated and caramelizing on all sides.

As they cook, the sauce will begin to thicken and turn sticky while the edges of the Spam caramelize.

Keep an eye on them during this final stage. You're looking for deeply caramelized edges and a thick, glossy sauce coating every cube.

The Final Glaze

Remove the pan from the smoker and immediately add the remaining 0.25 cup of Kosmos Q OP X-1 Competition BBQ Sauce.

Toss the hot Spam burnt ends until every piece is coated in that final layer of BBQ sauce.

This last coating gives the burnt ends their signature glossy finish and adds another hit of sweet, smoky BBQ flavor.
