Use it when frying chicken. First put a rub of Dirty Bird, then ginger, salt and pepper, garlic. Some butter or combo of butter and oil for frying. Fry low heat, and then cover and let “cook” for 40 to 50 minutes. Then add diced tomatoes [at least one can, sometimes 2] and let simmer until ready to serve. Serve preferably with pasta, though rice is also good. The Dirty Bird adds a bite and flavor that keeps my guests coming back for more. Time after time.
